The restaurant

Asador Etxebarri sits in the village of Axpe, in Atxondo, in the Basque Country, about 45 minutes by car from Bilbao. Chef and owner Victor Arguinzoniz cooks everything over wood and charcoal grills he designed himself, from seafood to dessert. The dining room seats around 40 people. In 2025 it was ranked No. 2 on The World's 50 Best Restaurants list.

Why a table is so hard to get

Demand far exceeds the number of seats. Requests open in limited windows, fill almost immediately, and most people who try never get a confirmation. Searches for an Asador Etxebarri reservation rise every time the list is published.

The request

A client asked us to secure a table at Asador Etxebarri as the centrepiece of a trip to the Basque Country.

What we did

  • Prepared the request in advance, with flexible dates to improve the chances

  • Planned the rest of the trip around the confirmed date: a driver from Bilbao or San Sebastián, a hotel, and further tables in San Sebastián
